Winemaking Notes

Harvest Date: October 21, 2009

Varietals: Grenache, Mourvedre, Counoise and Cinsault. The grapes were crushed and allowed minimal contact with the skins before pressing, giving the wine it beautiful deep rose hue. The wine was cold fermented with minimal intervention and bottled early to capture its delicate but vibrant nature.

pH: 3.6 — TA: 0.68 — Alcohol 13%
